If your trip is short and your phone is unlocked, an eSIM is the least effort. If you want a Chinese number without queuing, order a tourist SIM first. If you are staying for weeks or want full local plans, register a China Mobile SIM at a hall with your passport. Roaming only makes sense if your home plan already covers China at a fair price.

For a trip of a week or two, an eSIM is usually simpler because you install it before you leave and have data on landing. It needs an eSIM-compatible, unlocked phone. A local SIM suits longer stays or anyone who needs a Chinese phone number.

Dial 10086 from a China Mobile number. From other phones, add the local area code, for example 0731-10086 for Changsha. The online portal is 10086.cn, where you choose Hunan.
Not normally. A local China SIM connects through China's internet, where many foreign services are blocked. Roaming and some eSIMs route traffic through an overseas network instead, so check how your provider handles this before you rely on it.
